Nancy Parkinson MS, RDN, CD, LD
This course was taught by Nancy Parkinson, M.S., R.D., C.D.N., L.D. She is the clinical faculty member for the Nutrition and Dietetic program at Miami University in the Kinesiology Department. Her clinical specialty includes persons with chronic kidney disease. Her research and community interests involve nutrition education with children of all ages. She has a passion for teaching nutrition at the professional and personal level.

Taft Marsh: Urban Greens - a sustainable farming practice
Taft's farm is one of several with Urban Greens. He sells his produce at the Oxford Farmer's Market and to local restaurants in the Oxford area. Taft is also part of the Community Supported Agriculture (CSA) program, that allows consumers to pay a lump sum of money at the beginning of the growing season, and then pick up a weekly supply of fresh produce for a designated number of weeks.

Lisa Sharp-Gomez: Miami University Nutrition Student
Lisa is a student at Miami University, studying Nutrition and Dietetics. She is currently teaching nutrition and cooking skills classes to low income and diabetic participants through the Cooking Matters program, leading grocery store tours sponsored by Cooking Matters, teaching cooking and nutrition at Columbus area businesses through the Wellness Matters program.

Lauren Schwab - Schwab Family Farms
Lauren Schwab is a graduate of Miami University in Oxford. She graduated with her Bachelor of Arts in journalism and women’s studies from Miami in May, 2011 and Master of Science in May, 3013. Lauren works on her family's farm, managing the piglets in Somerville. She plans to pursue a career that will combine her skills in writing and reporting with her passion for advocating on behalf of women and agriculture.
